I was sooo in the mood for fish tacos today, but had never made them. I hit up pinterest and came up with a few good ideas. I wanted grilled fish (not fried), a slaw that wasn't mayo based, and some kind of cream. This recipe came out great, what a great fresh taste. I threw some pineapple on the grill with the fish and made a rice side. It was amazing.
Grilled fish tacos with cabbage slaw and sriracha sauce
Creamy Sriracha Sauce:
1 cup fat-free greek yogurt (could also use sour cream)
1 tsp garlic powder
1 Tablespoon freshly squeezed lime juice
3 teaspoons Sriracha
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
Cabbage Slaw:
2 cups pre-packaged slaw mix
2 Tablespoons fresh lime juice
1 Tablespoons olive oil
1/2 teaspoon toasted sesame oil
1/4 cup thinly sliced green onions (I use less)
Pinch of salt
Fish Rub: (for 2 filets)
1 Tablespoon garlic powder
1 Tablespoon kosher salt
1 Tablespoon cumin
1 Tablespoon paprika
1 Tablespoon crushed red pepper
1 Tablespoon chili powder
Mix all ingredients together
Lightly drizzle olive oil on the filets, front and back, then sprinkle on rub. Wipe down the grill with some oil before you put the fish on. As it cooks, keep your eye on the thick side of the fish, and remove the it from the grill when the thickest edge is white all the way across.
We warmed the corn tortilla in a small frying pan before adding some of the fish, flaked. Top with the slaw and a little of the sriracha sauce.
