My Big Fat Greek Saturday

Saturday was the Greek Festival at the church down the street from us. The Greek greeters grabbed us as we walked in and gave us all "Yassou!" stickers which mean good luck or something like that. The smells from the food were fabulous! Drew had Souvlaki and I had a regular Gyro. We walked around a little bit and saw some dancers:

And then it happened. We discovered the most delicious Greek thing yet... no, not Costas Mandylor , the source of the delicious smell wafting through the festival, the Saganaki Stand.

Wikipedia defines Saganaki (long boring stuff has been removed... you're welcome):

Saganaki (Greek σαγανάκι) is a salty and aromatic cheese-based Greek appetizer of fried or broiled cheese.

In some United States restaurants, after being fried, it is flambéed at the table (typically with a shout of "opa" in themed restaurants), and the flames then extinguished with the juice of a fresh-squeezed lemon; this is sometimes served with pita bread.

Here's the "Opa!".

The result is a highly aromatic piece of cheese sitting on 2 pita triangles 1/4 of it's size, and a small slice of lemon. We squeezed some lemon on and OH-MY-GOD was it good!
